Shape and external appearance
Shaped like small, slightly conical sticks.
Properties
Very nutritious root, rich in vitamins (A, B1, C and E). Scorsonera contain inulin (sugar suitable for diabetics)
Caliber
Length from 20 to 30 cm, diameter from 1 to 2 cm.
Scientific and botanical name
Scorzonera hispanica (Family Asetraceae) Other names: Black salsify, Spanish salsify.
Coloring
Black surface with white flesh.
Origin & Culture
Root cultivated by the Celts and Romans, who extracted remedies to treat the bubonic plague and snake bites. Scorsonera is a hardy plant that can be harvested as needed from October to March.
Smell
No particular smell.
Preparation advice
Scorzonera should be cooked in water for 20-30 minutes before peeling, as the raw roots secrete a milk that is sticky to the fingers.

Can be kept in the refrigerator for a few days.
Flavor
Flavor similar to salsify, slightly sweet, but more flavorful.
