Low in calories, Jerusalem artichokes are rich in potassium, fiber and inulin (sugar suitable for diabetics).
Caliber
From 4 to 8 cm.
Scientific and botanical name
Helianthus tuberosus L. (Family Asteraceae) cousin of the sunflower. Other names: Jerusalem artichoke, Canadian truffle, ground pear.
Coloring
The coloring can range from brown to purple pink
Origin & Culture
The name “Topinamboux” results from the francization of the name of a Brazilian tribe, the Topinamboux. The Jerusalem artichoke was introduced to Europe at the beginning of the 17th century. The tuber is planted from March and harvested from September to April.

The Jerusalem artichoke is prepared like a potato. It can be eaten hot with meat or cold in a salad.

The Jerusalem artichoke dehydrates very quickly, it must be stored in the refrigerator.
