Brassica oleracea L. var. botrytis L., family Brassicaceae (crucifers), subfamily Brassicoideae.
Coloring

Origin & Culture
Cauliflower originates from the Near East, where it was already harvested more than 2000 years ago (cauliflower was cultivated in Egypt 400 years before our era). Very appreciated in the Antiquity by the Greeks and the Romans. it fell into oblivion before the Italians introduced it to France and the gardener of Louis XIV, La Quintinie, made it fashionable. In the 17th century, finally, the multiplication of its culture, by sowing, develops. It is thanks to Louis XV that its notoriety was assured.

Preparation advice
Cauliflower can be eaten both raw and cooked. Raw, with a cold sauce as an aperitif or in a mixed salad, or cooked as a gratin, soup or side dish.
