Scientific and botanical name
Beta vulgaris var: “Crapaudine” (Family Chenopodiaceae) Other name: Oak beet, fir beet.
Coloring
Brown skin, almost black. Dark red flesh.
Origin & Culture
The oldest variety of beets, the toadstool has been known since the 17th century. It should be sown by mid-June at the latest and is slower growing than other beets. It is a late variety that is harvested in October.
Smell
No particular smell.
Preparation advice
The toadstools are eaten raw, grated or cut in vinaigrette, or cooked, in soups or stews. Steam for 30 minutes (pressure cooker) then peel and cut.
Texture
No particular smell.
Home preservation
In a cellar or silo, beets can be stored for 6 to 8 months. Can be kept in a cool place for 1 week.
Flavor
Sweet flesh, very fine.
